Simple Mushroom Soup Recipe!

This simple but wholesome soup recipe can be prepared in 20 minutes.

INGREDIENTS:

  • 25g butter
  • 1 small onion, peeled and sliced
  • 225g button mushrooms, washed and sliced
  • 25g flour
  • 600ml well-flavoured chicken stock
  • 150ml milk
  • Salt and freshly ground black pepper

To finish:

  • Chopped parsley, optional

GET COOKIN!

Heat the butter and fry the onion until soft. Add the mushrooms and saute for about 5 minutes. Stir in the flour and cook for 2 minutes. Allow to cool slightly, then add the stock and milk gradually. Bring to the boil stirring all the time. Season well, cover and simmer gently for about 20 minutes.

Serve hot, garnished with chopped parsley if liked.
